Hello! I’m Bryan, and I started working at Madcap in November of 2015. When I’m not at Madcap drinking coffee, my drink of choice would be wine. Which is where the inspiration for my signature drinks came from. I chose four major wine regions of France, and I chose a major grape/wine that comes from that area. In order from first to last, the wines these drinks are based off of are Vouvray, Pinot Noir, Carignan, and Champagne.
The first drink on the list is the Loire Valley. This drink is chilled Huang Meigui white tea with a reduction of pears, apples, and honey.
Second, we have the Burgundy, consisting of cascara and a reduction of raspberries, rosewater, brown sugar, and cloves.
Third is one of my personal favorite wine growing regions, Languedoc. This drink is chilled Third Coast espresso, with you’ll never guess, another reduction. This reduction has blackberries, plums, licorice root, and star anise.
The last drink, the real show-stealer, is Champagne. This is my favorite of the four signature drinks. This drink is almond milk, juice from champagne mangos, and vanilla. This drink will be served from a C02 charged siphon to give it the bubbly character that comes with champagne.
Besides going by Bryan, I’m known as turkey hunter. No, I’ve never killed a real turkey. However, if you go to Northfield Lanes bowling alley, I currently hold the 5th place record for Turkey Hunter USA (the arcade game). My all time favorite musician would have to be Bob Dylan. However, my favorite album as of lately would have to be “Coloring Book” by Chance the Rapper. If you haven’t listed to that yet, do yourself a favor and check it out. Outside of making coffee, you can usually find me where the food is. I love cooking, eating, and experiencing great food. With that being said, I would love to be able to make my way to Alinea at some point this year (in case you wanted any birthday present ideas). Oh, you can also usually catch me in the water somewhere, with some fishing poles too.
In my almost 8 months of working at Madcap, I’ve tasted some truly amazing coffees. It’s hard to pick a favorite, but I would say Elkin Echeverria from the Colombia tasting series takes the cake. With Madcap just having a remodel and with a second location opening soon, there are big and exciting things coming in the future for Madcap. I’m super excited to be a part of a growing company right alongside some amazing people!
