Party is our new rotating selection of natural processed (aka dry processed) coffee hailing from areas throughout Southern Ethiopia. Naturals are made by drying the coffee with the coffee cherry still intact, soaking in the fruit during fermentation (different from the washed process that removes from fruit, and washes the mucilage from the seed prior to drying). Southern Ethiopia is a prime location where naturals can shine. With high elevations, dry climate, and rare heirloom varieties these coffees can be wildly juicy, super compelling and very articulate when processed well.
We’ve been working with a handful of partners and tasting through dozens (maybe hundreds) of coffees to find the ones that are perfect for the party. Our objective has been to find coffee that’s exciting, fruit-forward, and still clean, showcasing terroir. What we’ve been avoiding, and honestly find more often than not in natural coffee, is boozy flavor, hints of vinegar, and over-ripe fruit (and of course woodiness, green pepper, dusty, artificial fruit, mold — I guess this list could go on and on). Like a lot of great coffee, we tasted a few samples before we came across the coffee we immediately knew was the coffee perfectly suited for Party.
