Heleanna is a dry-processed (or natural) coffee hailing from Moplaco’s washing station, Bensa Logita, in Sidamo. Moplaco is run by Heleanna Georgalis , a 4th generation coffee professional. Her father, Yiannis, started working in coffee at the age of twelve and started Moplaco in 1972, initially as an exporter of coffee predominantly from Harrar. Later the company would grow to be vertically integrated throughout Ethiopia, working as producers, owning washing stations, and building a reputation for being the benchmark for meticulous standards in dry milling and exporting green coffee. In 2008, Yiannis passed away and Heleanna returned home to Ethiopia to continue her family’s legacy in coffee.
At Bensa Logita the sorting and drying of the coffee is perfectly detailed. The coffee begins its drying under shade, before being moved to full sun hours later. While the sun is out and drying the coffee, their team moves the cherry regularly assuring the most even drying. Meanwhile, they pick through the cherry to ensure a uniform, ripe, and sweet flavor. Lastly, once the coffee is dried, it is then dry milled, also by Moplaco, where once more precision and detail ensure you yield a uniform, clean, and enjoyable coffee to export.
