A FOURTH GENERATION COFFEE FARMER WITH A NATURAL LEGACY
Heleanna Georgalis is a fourth generation coffee professional based in Gedeo zone of Southern Ethiopia, operating the Moplaco washing station. Her father Yiannis started Moplaco in 1972, and was a pioneer of naturally processed specialty coffee in the south. Moplaco has since expanded exponentially, with a reputation for upholding the benchmark of expert standards in milling and exportation.
The coffee that bears Heleanna’s name is processed naturally, meaning Heirloom variety coffee cherries are sorted by ripeness and then dried in the sun with the fruit and skin left on the coffee beans. After drying for 2-3 weeks with constant turning, this process imparts a complex depth of flavor on the beans, as well as consuming far less water in the process. The final cup expresses bright strawberry, lemon candy, and elderflower tasting notes.
