HOW WE BREW: CHEMEX EDITION
We’re back with the next installment of our at-home brew guides:the Chemex. This is our go-to pour-over brewer if we’re making coffee for several people. While there is no one perfect way to brew coffee, we are here to share some of our favorite methods and today will focus on the Chemex as that is our go-to for two.
The Chemex coffee brewer was invented in 1941 by a chemist who was way before his time in specialty coffee. We’ve always been fond of the simplicity of the brewer paired with the thick, bleached filters that assist in delivering a clear, nuanced transparency in the cup. The elegant brewer is also part of the permanent collection at the Museum of Modern Art in New York City.
RECIPE YIELDS 2 CUPS
WHAT YOU’LL NEED:
PREP:
Coffee Dose: 42g
Water: 680g @ 208F
Grind Size: medium / coarse
Brew Time: 6 - 7 minutes
CHEMEX BREWING RECIPE:
2. Pre-wet filter with hot water
3. Empty Chemex of rinse water
4. Weigh out coffee
5. Grind
6. Pour grounds into filter
7. Shake to level and knock to settle the grounds
8. Heat water to 208 degrees
9. Start timer at the beginning of the first pour
10. 1st pour – 80g
11. 2nd pour – 200g @ 0:45
12. 3rd pour – 200g @ 1:45
13. 4th pour – 200g @ 3:00
14. Drip out should end in 6 - 7 min
15. Through filter/grounds away

HERE ARE A FEW TIPS WHEN BREWING WITH A CHEMEX:
- Use filtered water. Water is the main ingredient in brewed coffee. The quality of your water will have a prominent impact on the flavor of your brewed coffee.
- Grind right before use. A burr grinder will give you the most even results.
- Use your favorite ceramics. Your favorite cups can add a personal aspect to the experience.
